What does this PR do?
Enables latest langchain version testing by using cassettes functionality from the testagent instead of using in-place mocking with
nock, which proved to be troublesome with certain openai versions, and then also troublesome when upgrading.High LOC count due to volume of cassettes added

Re-enable CI for latest langchain
