We’re excited to introduce a new creation from Tsunan Sake Brewery — the “Yukigesho Castella”, a sake lees-based cake inspired by the snowy landscapes of Tsunan. ❄️🍶🍰 Developed at the Sustainable Food Lab in Toranomon, Tokyo, this castella cake features a moist texture thanks to sakekasu (sake lees) and is accented with our dessert-themed sake GO DOLCE, delivering a rich, elegant flavor. The top layer, reminiscent of snow makeup (“yukigesho”), is crafted using sake lees for both visual beauty and umami depth. This initiative is part of our Sake Upcycling Project, which transforms byproducts of sake brewing into new value — from gourmet food to materials innovation. We are honored to announce that Tsunan Haku, our gold medal-winning sake from the 2025 National New Sake Appraisal, was featured at the Public Tasting Event held in Ikebukuro, Tokyo. This special event, hosted by the Japan Sake and Shochu Makers Association, brought together 400 of Japan’s top sake from over 1,600 breweries. Visitors from all over Japan—and beyond—explored the rich diversity of sake, including our Tsunan Haku, the only gold-winning sake made with Niigata’s signature rice Gohyakumangoku. We received insightful feedback directly from attendees, and deeply appreciated the opportunity to share our passion for sake brewing rooted in the terroir of Tsunan. We are pleased to share that Tsunan Sake Brewery participated in Sustainable Food Showcase vol.7 at the Sustainable Food Museum in Tokyo on July 10, 2025. Our CEO, Kengo Suzuki, joined a panel discussion on the theme “The Potential of Fermentation and Food through Tradition and Advanced Technology”.
