Update the Shibboleth repository URL in the docs as per https://shibboleth.atlassian.net/wiki/spaces/DEV/pages/2891317253/MavenRepositories
The URLs were updated in 2022: https://shibboleth.net/pipermail/dev/2022-January/010908.html. The redirects from the old URLs appear to be still in place, so this is not urgent. However, there appeared to be some kind of outage yesterday which affected the redirect. It would be nice to be using the more up-to-date URLs though.
I've targeted the 6.3.x branch for this PR, with the intention to create PRs for the newer branches if acceptable.
