plugin version used google_maps_flutter: ^0.5.19+2
This is the solution I am using.
I am using Markers and setting the draggable to true.

_markers.add(
        Marker(
          markerId: MarkerId('marker_2'),
          position: latLng,
          draggable: true,
          icon: _searchMarkerIcon,
         ),
 );

Then, I am using onCameraMove Event in GoogleMap()

GoogleMap(
         mapType: MapType.normal,
         initialCameraPosition: _kCurrentLocation,
         onMapCreated: _onMapCreated,
         markers: _markers,
         myLocationEnabled: true,
         myLocationButtonEnabled: true,
         onCameraMove: ((_position) => _updatePosition(_position)),
        ),

and my _updatePosition() method handles the new lat lng. and set that new lat lng to my marker object.
