Issue
Go 1.22 has been released 🥳 which means Go 1.20 will no longer be receiving updates 😞.
Description
This change adds Go 1.22 to the Go version matrix in CI and updates all Dockerfiles to use Go 1.21.8.
Testing
Ran CI in fork (successful)
