Cannot be used in projects without manually defining all the defines before including any of the headers!

• Add the defines with default values in config.hpp. This way we have defaults in the project code rather than the build system
• Produce the release
• Update vcpkg port
• Remove the config.cmake includes from the CI system and vcpkg package tests
