Summary

Per preservation guidelines, we should have versioning padded with zero (e.g., v01, v02, etc). We currently have no padding (e.g., v1, v2)

Objectives

1. Change folder structure from v? to v??.
2. Add a script or provide a simple command to easily do this for previous datasets that went through curation
